Jack fruit
- Green jack fruit piece 500 gm
- Oil 2 table spoon
- Garlic paste 4 tea spoon
- Ginger paste 4 tea spoon
- Onion paste 4 tea spoon
- Sour curd 8 tea spoon
- Chili powder 1 tea spoon
- Sugar 1 tea spoon
- Coriander powder 2 tea spoon
- Salt as required
- Water as required
Polao:
- Rice 500 gm
- Ghee 2 table spoon
- Salt as required
- Fried onion slice 4 tea spoon
- Polao spices 1 tea spoon
- Green chili 10-12
Green Mango Syrup:
- Green mango (medium) 3
- Water 2 mug
- Sugar 4 tea spoon
- White black pepper powder ½ tea spoon
- Mustard powder ½ tea spoon
- Salt 1 tea spoon
Methods/steps
- Boil the green jack fruit pieces in salt water for 5 minutes.
- Take pan, pour oil and add ginger paste, garlic paste, onion paste and cook for 3 minutes. Add little water to cook well.
- Add sour curd, sugar, chili powder, coriander powder with the cooked spices and cook for 3 minutes.
- Add the boiled jack fruit and cover and cook for further 5 minutes.
- Bring down from the burner
- Take ghee into a pan and cook until ghee is hot enough. Now add rice, salt (2 tsp), fried onion slice and cook for few minutes.
- Add 3 mug of water (½ liter) and cover and cook for 15 minutes.
- Add the cooked jackfruit, green chili, polao spices, and fried onion slice and mix it properly and again cook for another 5 minutes.
- Bring down the pan from the burner.
- (Green mango syrup): Boil the mangoes into hot water. Separate the pulp and blend with water, sugar, pepper, mustard powder and salt.
- Serve the Polao with the Mango syrup.
