  • Vegetables: carrot, beans, peas, potato, cauliflower, mushroom, corn, cabbage and green pepper (or any nine vegetables available in the market)
  • Onion 1(small)
  • Tomato 1(small)
  • Green chilies 2
  • Coconut 2 small piece
  • Cashews 4
  • Turmeric powder 1 pinch
  • Coriander powder 2 Tbsp
  • Red chilly powder 1 tsp
  • Cloves 2
  • Cinnamon 1 big piece
  • Cardamom 1
  • Star 2
  • Bay leaves 1
  • Ginger garlic paste 1 tbsp
Methods/steps
  1. Coconut, fennel seeds, cashews and green chilies- Grind all to fine smooth paste.
  2. Heat oil in the pan and fry all the spices (cloves, cardamom, cinnamon, bay leaves and star aniseeds).
  3. Put the cut onions and fry until it becomes transparent.
  4. Add ginger garlic paste and fry it till the raw smell goes.
  5. Add the cut tomatoes and sauté it.
  6. Now add turmeric powder, coriander powder and red chilly powder one by one.
  7. Add the ground paste and mix it well.
  8. Then add all the cut vegetables and mix it well with the gravy.
  9. Put salt as per taste. Add 1 cup of water and cover the lid.
  10. Cook it until all the vegetables are cooked. It takes about 25 minutes.
  11. Don’t over cook the vegetables. Garnish it with cilantro.
